Spring Radish & Egg Sandwich with Smoked Salmon

Radishes are one of the first offerings of spring and the rightful star of this velvety egg sandwich. Enjoy.

  • 2 slices of bread
  • 1 tbsp mayonnaise
  • 2 tsp yellow mustard
  • 1 avocado, peeled, pitted and sliced
  • 1 soft-boiled egg, halved
  • 56 grams smoked Atlantic salmon, sliced
  • 1 scallion, chopped
  • 2 radishes, thinly sliced
  • Salt and freshly cracked black pepper, to taste
  • Chopped dill, to garnish

Evenly spread the mayonnaise and mustard on the bread, and top each piece with half an avocado, half an egg, half the salmon, half the scallions and one sliced radish. Season with salt and pepper, garnish with chopped dill and devour.
