The best way to describe this cocktail: instant elegance. Tasty works, too.

1 1/2 oz gin

3/4 oz freshly squeezed lemon juice

1/2 oz simple syrup

2 oz chilled Champagne (or cava)

Curl of lemon peel, to garnish

For the simple syrup

1/2 cup sugar

1/2 cup water

To make the syrup, bring the water and sugar to a boil in a small pot; reduce the heat to low, and let simmer 5 minutes. Remove the pot from the heat, let the syrup cool to room temperature and place in the fridge to chill.

Pour the gin, lemon juice and simple syrup into a shaker filled with ice, secure the lid and shake until chilled. Strain into a Champagne flute, top with bubbly and garnish with a curl of lemon peel.
