Espresso & Irish Cream Butter Filling

What’s better than two butter cookies? Two butter cookies sandwiched together with a coffee cream filling.

1 cup icing sugar

1/2 cup unsalted butter, softened

2 tbsp unsweetened cocoa powder

2 tsp instant espresso powder

1 tsp Baileys Irish Cream

In a small bowl, beat all the ingredients with a mixer at medium speed until smooth. Use at room temperature, and store the remainder in the fridge.
