Miso Soup

This is the quintessential daily dish of Japanese culture. Made from fermented soybeans and consumed at least once a day in most Japanese households, it holds a special place for digestive health and comfort alike. It may seem intimidating to make, having to buy specialty ingredients, but it really is so straightforward and satisfying that you may just catch on to this Japanese culinary habit!

INGREDIENTS

  • 2 tbsp. miso paste or powder
  • 1.5 tsp. dashi powder
  • 10-15 thinly sliced yellow onions
  • 3 c. filter water
  • 1 tsp. sliced green onions

INSTRUCTIONS

Bring filtered water to a boil, add the yellow onion and dash powder in a small pot and simmer for 10 minutes, until onions are tender. Stir in the miso paste or powder, turn the burner off and stir until dissolved. Garnish with green onion slices.
