Anytime Granola

There’s something satisfying about making your own granola. This one’s great on it’s own, or as a topping for Greek yogurt with a drizzle of honey or maple syrup.

½ cup unsalted butter

¼ cup brown sugar

¼ cup maple syrup

2 tsp vanilla extract

¼ cup almond flour

½ cup almonds, slivered

½ cup raw pumpkin seeds

2 cups old-fashioned
large-flake oats

½ cup coconut, shaved or shredded

½ tsp cinnamon

½ tsp sea salt

½ cup dried fruit (optional)

Preheat oven to 275°F. Brown the butter, transfer to a bowl, and add brown sugar, maple syrup, and vanilla extract. Set aside.

In a separate large bowl, combine the almond flour, almonds, oats, pumpkin seeds, coconut, cinnamon, and salt. Add the butter-sugar mixture and stir to coat well.

Spread the granola mixture on a baking sheet lined with parchment paper. Bake 40–50 minutes, stirring occasionally until golden. Let granola cool completely and break into clusters. At this point, you can add dried fruit, but this will soften the granola. So if you like it crunchy, omit the fruit. Store in an airtight container.
