Smokey Maple Turkey

Ingredients:

2 cups apple cider

1/2 cup maple syrup

1 tbsp thyme

1 tbsp rosemary

2 tsp smoked paprika

1/2 cup melted butter

1 turkey, cleaned and dried

1 pinch salt and pepper

1 medium onion, chopped into large chunks

1 head garlic, chopped

2 bay leaves

Directions:

-Combine the apple cider and maple syrup in a medium saucepan, and bring it to a slight simmer.

-Remove the saucepan from heat, and stir in the thyme, rosemary, smoked paprika and melted butter. Cover, and place in refrigerator to chill.

-Preheat your oven to 325°F.

-Season the inside of the turkey with salt and pepper, ensuring even coverage. Stuff with chopped onions, garlic and bay leaves.

-Take your cooled maple mixture and brush the turkey’s exterior, ensuring full coverage.

– Place the turkey in a large roasting pan, and cover with foil. Roast for two hours, basting as needed. When timer rings, remove the foil and brush the remaining maple mixture onto the turkey. Increase the oven temperature to 425°F, and continue to roast until an internal temperature of 175°F is reached.

-Remove the turkey from oven, and allow it to cool for 10 minutes before carving.

 

 

 

Sweet Pumpkin Pie

Ingredients:

1 1/2 cups mincemeat

1 egg

1 cup pumpkin puree (For directions on how to how to puree a pumpkin, click here)

1/2 cup brown sugar

1/2 tsp cinnamon

  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 pinch salt
  • 1 prepared 8-inch pastry shell
  • 1 cup whipped cream

Directions:

-Preheat your oven to 425°F.

-In a large mixing bowl, whisk together the egg, pumpkin puree, brown sugar, spices and salt.

-Spread the mincemeat evenly onto the bottom of the pastry shell, and pour your pumpkin mixture over top.

-Place in the oven, and bake for 40 minutes.

-Remove from the oven, and allow to cool before serving.
