August, 2017

Looking to jazz up your rice game? This recipe is all that.

  • 1 teabag mint tea
  • 1 teabag green tea
  • 2 cups boiled water
  • 1 1/2 tbsp extra-virgin olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1 cup basmati rice
  • 1/4 cup golden raisins
  • 1 cup freshly diced tomatoes
  • 1/2 cup freshly chopped mint
  • 1/2 cup freshly chopped parsley

Steep the teabags in the boiled water for 10 minutes; then discard the bags. Warm the olive oil in a medium-sized pot; then add the onions, and cook them over medium-high heat until tender (about 3 minutes). Next, add the garlic, cinnamon, cumin, ginger, paprika and salt. Stir to combine, and then add the rice. Stir to combine again; then add the steeped tea and raisins, and bring the mixture to a boil. Place the lid on the pot, reduce the heat to low and cook the rice until all the liquid has been absorbed.

When the rice is cooked, stir in the tomatoes, mint and parsley, and serve.
