Flourless Cashew Butter Cookies

A simple, school-friendly take on the classic peanut-butter cookie. These are so tasty that whoever is eating them won’t even realize just how wholesome they are!

INGREDIENTS

  • 1 365ml jar cashew butter
  • 1/2 c. + 1 tbsp. coconut sugar
  • 1/4 heaping tsp. sea salt
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla extract
  • 2 eggs

INSTRUCTIONS

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine all ingredients until the dough is well mixed and sticky.
  3. Line a cookie tray with parchment paper.
  4. With wet hands, roll the dough into tablespoon-sized balls. The water helps to prevent the dough from sticking to your hands, so you’ll have to continue wetting them as you go.
  5. Gently press the balls down into circle shapes. If desired, make a criss-cross pattern atop them using a wet fork.
  6. Bake for 8-10 minutes and let cool completely before moving.
