Black-and-Blueberry Ricotta Bruschetta

If a glass of white wine with some nibbles is your thing, meet your new, favourite appetizer.

7 slices of ciabatta bread, grilled to your liking

1 cup ricotta cheese

17 large mint leaves, julienned

1 tsp lemon juice

1/2 tsp salt

1/2 tsp freshly cracked black pepper

Zest of 1 lemon

1/2 cup fresh blueberries

1/2 cup fresh blackberries

Honey, for drizzling

In a small bowl, mix together the ricotta, mint, lemon juice, salt, pepper and lemon zest until smooth. Spread the mixture onto the grilled bread, top with berries and drizzle with honey. Delicious!
