Homemade Ketchup Chips

4 large Russet potatoes, sliced thinly lengthwise

3 tbsp olive oil

2 tbsp white sugar

3 tbsp tomato paste

2 tbsp white vinegar

2 cloves garlic, crushed

1 tsp onion powder

1 tsp mustard powder

1/2 tsp smoked paprika

1 tsp salt

1 tsp freshly cracked black pepper

Preheat your oven to 350˚F, and line two baking sheets with parchment paper.

Place the sliced potatoes in a large mixing bowl. Place all the other ingredients in a small pot over medium heat, and whisk until the sugar is dissolved and the mixture is hot but not boiling. Pour the mixture over the potatoes, and toss to coat. Arrange the potatoes in a single layer on the prepared baking sheets, and place them in the preheated oven for about 35 minutes, turning them over after 25. When golden, serve them up with an extra sprinkle of salt and your favourite cocktail
