Gouda Dinner Biscuits

Serve these flaky-on-the-outside, soft-on-the-inside biscuits straight out of the oven. Just make sure you have one for everyone, because no one’s going to pass these up.

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1 tsp ground black pepper
  • ½ cup cold butter, grated
  • 1 cup medium gouda, shredded
  • ½ cup buttermilk
  • 1 Tbsp butter, melted
  • course sea salt

INSTRUCTIONS

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Place butter in the freezer for one hour.
  3. Meanwhile, in a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, and pepper.
  4. Grate the frozen butter into the dry mixture and mix until the butter is incorporated.
  5. Add the shredded cheese, distributing gently but evenly throughout the mixture.
  6. Add the buttermilk, and work it into the mixture using your hands. The dough should stay together when formed into a ball.
  7. Turn the dough out onto a lightly floured surface, and roll out into a 1-inch thick circle.
  8. You can use a #70 round cutter to cut the dough (or an overturned short glass tumbler). Or use a knife to cut into wedges (like a pizza).
  9. Place each biscuit onto the baking sheet, brush the tops with melted butter, and sprinkle with coarse sea salt. Bake 20–25 minutes, or until golden brown.
