Chicken Salad with Honey-Mustard Dressing & Grilled Nectarines

07012016_256Chicken salad is a summertime classic but can often lack crunch. Not this version. Give it a try.

  • 1 1/2 cups shredded purple cabbage
  • 1 small bag of mixed greens (or 1 large head of Romaine)
  • 2 cups shredded leftover chicken (we used rotisserie)
  • 1/2 cup crumbled feta cheese
  • 2 nectarines, halved and grilled
  • 1/3 cup fresh blueberries
  • 2 tbsp pumpkin seeds
  • Honey-mustard dressing (see Honey-Mustard Salad Dressing recipe)

In a large salad bowl, toss together the shredded cabbage, mixed greens, chicken and crumbled feta. Add the grilled nectarines, blueberries and pumpkin seeds. Drizzle with honey-mustard salad dressing, and serve.
